  2. Die Milch erwärmen & den Honig darin auflösen..
  3. Die Eier trennen, dabei das Eigelb in einer kleinen Schüssel aufbewahren & das Eiweiß in eine große, fettfreie & trockene Schüssel geben..
  4. Das Eiweiß mit dem Handrührgerät steif schlagen & dabei nach & nach den Zucker dazugeben. Der Eischnee sollte sehr fest sein..
  5. Den Backofen auf 180° Grad (Ober-/Unterhitze) vorheizen..
  6. Das Eigelb mit dem Eischnee verrühren. Sobald alles gut durchmischt ist, die Honigmilch & optional Mirin hineingießen & erneut alles gut vermengen..
  7. Das Mehl & das Matchapulver nun auf die Eiermischung sieben & mit einem Teigschaber nur so lange unterheben, bis keine Klümpchen mehr sichtbar sind..
  8. Zuletzt das Öl hineingeben & in den Teig einarbeiten..
  9. Jetzt kann der Teig in die Backform & in den Ofen. Nach 20 Minuten Backzeit den Ofen auf 150° Grad herunterdrehen & weitere 35-40 Minuten backen..
  10. Nach Ende der Backzeit eine Frischhaltefolie auf die Arbeitsplatte legen & den Kuchen mit der Oberfläche auf die Folie stürzen. Dabei das Backpapier dran lassen. Sobald er komplett ausgekühlt ist, die Folie & das Backpapier abnehmen, umdrehen & in Stücke schneiden. Wer ein scharfes Messer hat, kann das Backpapier am Boden dranlassen & mit den Kuchenstücken schneiden, da die klebrige Masse am Backpapier der leckerste Teil am Kuchen ist....
